In our quest to eat healthier, sometimes we feel like it has
to be all or nothing. If we want something sweet and fatty, we either have to
resist or just go for the candy bar. The following recipe is third option – it
contains sugar and fat, but is less processed, more nutrient rich, and still
easy to make.
Chocolate Avocado Mousse
1 ripe avocado (discard skin and pit)
1/4 C. cocoa powder
1/4 C. maple syrup
1 T. ground flax seed
1 T. ground flax seed
1 T. natural nut butter (just nuts in the ingredients list)
1/3 C. non-dairy milk (or 1/2 C for pudding consistency)
Toppings (shredded coconut, slivered almonds, or berries)
Add all of the ingredients to a small food processor or blender, except for the toppings, and blend until smooth. Serve chilled and topped with favorite topping(s).
